Located in Vancouver’s Chinatown, the vegan, vegetarian and gluten-free restaurant opened its doors in October 2012, and has since earned a distinct reputation as a trend-setting, sustainable eatery with an ever-evolving menu. In essence, dishes change depending on what is the current best available choice to chef Felix Zhou. Manager Steve Da Cruz meets and greets, working the floor and treating each of his diners with equanimity.
Start with a cocktail, and, seeing as we are here, what better than a Vancouver, a mix of gin, cinzano rosso, bénédictine and orange bitters. The happy hour and dinner menus feature value-driven, locally sourced, organic, bio-dynamic and sustainably-farmed ingredients. As Steve is happy to point out, the team follow the seasons and, as such, some dishes can change to reflect what is currently the best available choice, both producers and suppliers being carefully chosen by Steve and Felix.
With virtually zero waste per month, The Parker is driven by passion and imagination, and it shows.
